
This Trader Joe’s Autumnal Harvest Pasta recipe + the change in weather has definitely put me in the “Fall” mood.
I’ve always loved Trader Joe’s Autumnal Harvest pasta sauce, but every year I make it with just the pasta noodles which gets super boring. I love eating really great dishes at restaurants, but definitely don’t have the skill to cook anything other than simple…
To switch things up, I looked at what other ingredients I could add. I had walnuts and spinach at home. Some crunch + greens sounded like a good idea, and it turned out to be delicious.
I also love that this still tasted good with the red lentil pasta. Pasta is something I could eat for almost every meal. For the longest time I gave it up because…carbs. But I have really started to like red lentil pasta. It’s made with one ingredient – red lentils. The Trader Joe’s brand is also organic.
It’s SO simple to make – like all of 8 minutes after you get the water to boil. Trader Joe’s has all the ingredients (for a total of less than $20, btw).

Trader Joe’s Autumnal Harvest Pasta
Cook Time: 18 Min (10 mins to boil water + 8 minutes to cook/plate)
Serves: 2
INGREDIENTS:
+2 Cups Red Lentil Pasta
+1 1/2 Cups Trader Joe’s Autumnal Harvest Pasta Sauce
+1/2 Cup Spinach
+1/4 Cup Walnuts
+Parmesan (however much you prefer to use as a topping)
TOOLS:
+Measuring Cups (1/4 + 1 Cup)
+2 Pots
+Strainer
INSTRUCTIONS:
1: Fill 1 pot with 3 quarts (~12 cups) of water. Place on stove top and bring to a boil.
2: Once water is boiling, add in pasta and stir immediately. Let cook for 5-6 minutes.
3: While the pasta is cooking, pour Autumn Harvest Sauce into a small pot and cook on low heat. After 2 minutes, add in spinach, stir, + cook until spinach is lightly wilted.
4: Once pasta is cooked, remove from stove and pour into strainer.
5: Pour strained pasta into the pasta sauce + stir.
6: Put on plate, top with parmesan and walnuts, + enjoy!
