
Jicama wrap tacos have become a weekly staple for me. My boyfriend’s go-to weekly meal has always been a taco salad with turkey meat. For awhile, I tried to stop eating meat/dairy during the week. But we started getting over having to cook two separate meals (so unproductive).
Simultaneously, I found jicama wraps at Trader Joe’s and was very interested. I decided to add jicama wrap tacos to my weekly menu to just make things easier on the two of us. Well, mostly easier for me since it’s so convenient to just put these tacos together for dinner when he’s already cooked all of the ingredients, lol.
BUT, I definitely don’t mind cooking everything some weeks since it’s so quick (like less than 15 minutes, quick) and insanely easy to make.
The jicama gives the taco a crunch, some extra flavor + the idea you’re eating an actual taco. Obviously at 3 grams of carbs/wrap + the fact that the wrap only has 1 ingredient (jicama, of course), it’s a much healthier alternative to a tortilla.
The recipe usually gives us 3-4 servings. We love making these jicama wrap tacos earlier in the week so we can save the leftovers for lunch the next day.

Jicama Wrap Tacos
Ingredients:
+1 package lean ground turkey meat
+1 packet of Mrs. Dash Salt-Free Taco Seasoning -or taco seasoning of your choice (I like this because it’s salt-free)
+1/4 uncooked quinoa
+1 can Organic Black Beans (preferably, no salt added)
+Jicama Wraps (Trader Joes + Whole Foods have great ones)
+Topping(s) of your choice*
*I like shredded cheese, Trader Joe’s Jalapeño Sauce + fresh squeezed lime.
Tools:
+Measuring Cup (1/4 Cup)
+1 Large Nonstick Skillet
+2 Pots
Instructions:
1: Cook quinoa over stove top.
2: While the quinoa is cooking, heat stove and add turkey meat. Cook on medium heat and stir occasionally to break apart into small pieces.
3: Cook black beans over stove top on low. Drain, once heated.
4: Once the turkey meat has cooked for about 3-5 minutes (or until it’s no longer pink), add the taco seasoning packet. Stir to evenly mix the seasoning throughout the meat.
5: Evenly distribute 1/2 cup turkey meat + 1/4 cup of quinoa + 1/4 cup black beans across however many jicama wraps you prefer (I usually do 3)
6: Top with whatever toppings you like + enjoy!
